Three long drinks, one simple rule

One part spirit, a squeeze of citrus, a long pour of something fizzy. That is most of the craft.

The easiest drinks to make well are long drinks. The rule is simple: one part spirit, three parts something fizzy, plus a little fresh citrus for balance.

The rule

Measure 50 ml of the spirit into a tall glass full of ice, add a squeeze of lime or grapefruit, then top with about 150 ml of your mixer. Stir once. That is the whole method.

Three ways to play it

With Pink Dream, try tonic water and a wedge of grapefruit. With Lychee Bliss, soda water, lime and a few slices of cucumber. With Spiced Velvet, ginger beer and lime.

Three small details

Use cold mixers, fresh ice and a tall glass. Pour the mixer slowly down the side of the glass to keep it fizzy, and avoid stirring more than once or twice.
