A beach evening is a feeling more than a place: warm light, cold glasses, nobody in a hurry. You can build it on a balcony, a rooftop or a kitchen table. Here is how we would set it up.
Keep the menu short
Pick one signature serve and one easy long drink. Two options are enough for any evening, and they keep you at the table instead of behind the bar. A good pair is something stirred and something built over ice, such as a Spiced Velvet Old Fashioned and a Pink Dream & Tonic.
Prepare before anyone arrives
Cut your citrus, wash the mint, chill the glasses and fill every ice container you own. Cold glasses and plenty of ice do more for a drink than any garnish.
Set the light and the sound
Low, warm light works best: candles, string lights, or simply the last hour before sunset. Choose a playlist you can leave running for the whole evening, and keep the volume low enough to talk over.
Look after your guests
Put out water and a non-alcoholic option next to every drink, and make sure nobody who is driving is pushed to have another. A good host makes it easy to say no.
